Ingredients

  • • Lane’s Fiesta Seasoning, as needed

  • Lane’s Tokyo Drip Sauce, as needed

  • 1 whole chicken, approximately 1.5–2kg

  • Fresh coriander, roughly chopped

Directions

  1. Place the chicken breast-side down on a chopping board. Using kitchen shears or a sharp knife, carefully cut along both sides of the backbone and remove it.

  2. Pat the chicken dry with paper towel, then season generously all over with Lane’s Fiesta Seasoning. Make sure you season both the skin and underside of the chicken.

  3. Preheat the smoker to 150°C and place the chicken inside with the skin facing underwards.

  4. Cook for approximately 45–60 minutes, or until the thickest part of the breast and thigh is approaching an internal temperature of 75°C.

  5. During the final 10 minutes of cooking, generously coat the chicken with Lane’s Tokyo Drip Sauce. Continue basting as it cooks to build a sticky, glossy glaze.

  6. Remove the chicken from the smoker once it reaches an internal temperature of 75°C. Allow it to rest for 10 minutes before slicing.

  7. Garnish with fresh coriander and serve with extra Lane’s Tokyo Drip Sauce on the side
