Yiros Inspired Tacos
1 Tsp Salt
2 Cups Plain Flour
3/4 Cup Milk
Pulled Lamb (See our method here)
1/2 Red Onion
Plain Greek Yoghurt
Melt butter and milk in microwave until just melted.
Combine the flour and salt then mix in the butter/milk mixture until a dough forms.
Sprinkle work surface with flour then knead for a few minutes until it is smooth
Wrap with cling wrap and rest at room temperature for 30 minutes or so.
Dust bench top with flour, cut dough into 16 pieces, roll into balls, then roll out until very thin and round.
Heat up an oiled skillet and place one flatbread in the pan, cook for around 1 – 1 1/2 minutes. Flip and cook the other side. There should be a smallish golden brown spots on both sides.
Cook all the breads and allow to rest wrapped in foil.
Dice up the tomatoes, cucumbers and onions. Crumble the fetta and set aside.
Mix up a 1/4 cup of yoghurt and 2 Tbsp of mint jelly.
Add lamb and vegetables and feta to the flat bread, top with a dollop of mint yoghurt and eat immediately!
