Ingredients

    • 1.5kg chicken wings 

    • 3 tbsp Lane’s Tex Mex Rub 

    • 2 tbsp olive oil 

    • 50g butter, melted 

    • Juice of 1 lime 

    • 1 tbsp honey (optional, for a sticky kick)

    • 200g cream cheese, softened 

    • 100g cheddar, grated 

    • 2 tbsp Lane’s Tex Mex Rub 

    • 12 rashers streaky bacon

    • 1.5kg chicken wings 

    • 3 tbsp Lane’s Italian Stallion Rub 

    • 2 tbsp olive oil 

    • 50g butter, melted 

    • 3 cloves garlic, minced 

    • ½ cup grated parmesan 

    • Fresh parsley, chopped (for garnish)

    • 500g beef mince 

    • 250g pork mince 

    • 1 egg 

    • ½ cup breadcrumbs 

    • 3 tbsp Lane’s Italian Stallion Rub 

    • 1 punnet cherry tomatoes 

    • 1 jar marinara sauce (for dipping) 

    • Skewers (metal or soaked wooden) 

    Directions

      1. Season – Pat wings dry. Toss in olive oil + Tex Mex rub until coated.

      2. Cook – Grill or smoke indirect at 180°C for 45–60 mins, flipping halfway. Internal temp 75°C.

      3. Finish – Whisk butter, lime juice, and honey (if using). Toss wings in the mix.

      4. Serve – Pile high, extra lime wedges on the side.

      1. Prep – Halve jalapeños lengthwise, scoop seeds.
      2. Fill – Mix cream cheese, cheddar, Tex Mex rub. Stuff each jalapeño.
      3. Wrap – Wrap each with bacon rasher, secure with toothpick.
      4. Cook – Grill indirect at 180°C for 25–30 mins until bacon is crisp.
      5. Serve – Gooey inside, smoky outside — guaranteed crowd-pleaser.
