200g cream cheese, softened

100g cheddar, grated

12 rashers streaky bacon
ITALIAN GARLIC-PARMESAN WINGS

1.5kg chicken wings
-
3 tbsp Lane’s Italian Stallion Rub

2 tbsp olive oil
-
50g butter, melted

3 cloves garlic, minced

½ cup grated parmesan
-
Fresh parsley, chopped (for garnish)
Itallian Meatball Skewers

500g beef mince
-
250g pork mince
-
1 egg
-
½ cup breadcrumbs

3 tbsp Lane’s Italian Stallion Rub

1 punnet cherry tomatoes

1 jar marinara sauce (for dipping)

Skewers (metal or soaked wooden)
Directions
Tex Mex Wings
Season – Pat wings dry. Toss in olive oil + Tex Mex rub until coated.
Cook – Grill or smoke indirect at 180°C for 45–60 mins, flipping halfway. Internal temp 75°C.
Finish – Whisk butter, lime juice, and honey (if using). Toss wings in the mix.
Serve – Pile high, extra lime wedges on the side.
Tex Mex Jalapeno Poppers
- Prep – Halve jalapeños lengthwise, scoop seeds.
- Fill – Mix cream cheese, cheddar, Tex Mex rub. Stuff each jalapeño.
- Wrap – Wrap each with bacon rasher, secure with toothpick.
- Cook – Grill indirect at 180°C for 25–30 mins until bacon is crisp.
- Serve – Gooey inside, smoky outside — guaranteed crowd-pleaser.
Italian Garlic-paramesan Wings
- Season – Pat wings dry. Toss in olive oil + Italian rub.
- Cook – Grill/smoke indirect at 180°C for 45–60 mins until crisp.
- Garlic Butter – In a pan, melt butter, sauté garlic until fragrant. Toss wings through.
- Finish – Sprinkle parmesan and parsley over wings before serving.
Italian Meatball Skewers
- Make Meatballs – Mix beef, pork, egg, breadcrumbs, Italian rub. Roll into 20–24 balls.
- Grill – Cook over medium heat on BBQ or smoker until browned and cooked through (15–20 mins).
- Build Skewers – Alternate meatballs, cherry tomatoes, mozzarella balls.
- Serve – With a bowl of warm marinara for dipping.
