Tex Mex Bowl

Ingredients
1 packet Lane’s Tex Mex Seasoning Base
1kg beef mince
1 onion, diced
Olive oil, for cooking
1 avocado, sliced
1 cup corn
Shredded cheese
Doritos, crushed or whole
Optional: sour cream, lime wedges or fresh coriander to serve
Directions
Dice the onion and add it to a bowl with the beef mince and Lane’s Tex Mex Seasoning Base.
Mix everything together until the seasoning is evenly combined through the mince.
Heat a pan over medium-high heat and add a drizzle of olive oil.
Add the beef mince mixture to the pan and cook until browned, breaking it up as it cooks.
For the best result, cook the mince in smaller batches so it browns properly instead of steaming.
While the beef is cooking, slice the avocado into quarters or smaller slices.
Warm the corn if desired, or leave it fresh for extra crunch.
To assemble, add the cooked Tex Mex beef to a bowl.
Top with sliced avocado, corn, shredded cheese and Doritos.
Finish with sour cream, lime or coriander if using.
Serve straight away while the beef is hot and the cheese gets a little melty.
