Ingredients
- Whole Pumpkin (around 2.2.kgs)
- ButterÂ
- 1 Diced onion
- 1x Sweet Potato
- 3 Cloves of garlic
- Lane’s Everything Toasted BagelÂ
- Chicken stock
Directions
- Cut the pumpkin into quarters. De-seed. Cut sweet potato into same size quarters.
- Season pumpkin with Everything Toasted Bagel.
- Pre heat smoker to 135c / 275f
- When up to temp, place the pumpkin and sweet potato quarters, Smoke for 1 hour or until fork tender.
- Melt butter in a saucepan and sauté the onion and garlic until translucent.
- Add 1L of chicken stock and smoked veg into the pot and let the soup simmer for 30mins
- Blend with a stick blender to the desired consistency.
- Add Salt and pepper to taste
- Plate up the soup in a bowl, add a swirl of cream if desired.
- Toast bread with cheese and dip into soup.
