Preheat oven to 180 degrees and line a baking tray with baking paper.
Boil sweet potato in a large saucepan until softened, approximately 15-20 minutes.
Once boiled, lay potato skin side down on baking tray. Using a potato masher, gently mash the top of the potato. Drizzle with oil and bake for 20 minutes or until roasted.
Meanwhile, heat oil in a medium frying pan on a medium heat.
Add onion and garlic to frying pan and cook until softened, approximately 1 minute. Add beef mince and cook for 5-7 minutes or until browned. Stir through corn and cook until heated through.
Top smashed sweet potato with mince mixture, parsley, sauce and finishing salt.
