SKIPPERS' QNAMI SALMON w/ NOODLES
Our mate Luke "Skipper" Ruttley is seriously a food ninja! He makes simple, real food most of the time on his Kamado Joe, over direct heat and the results are sensational. Yet so simple that you can do it too!
ENJOY!
STOCK:
- 1 packet noodles*
- 1ltr chicken stock
- 2 cloves minced garlic
- About the same volume of minced ginger
- 1-2 Tablespoons light soy sauce
- 2 teaspoons fish sauce
-Splash sesame oil
Simmer for 30mins
Cook the noodles about a 3rd of the way to packet recommendation, the hot broth will do the rest.
SALMON:
- 3 salmon fillets
Season the salmon on the three fleshy sides with Lanes Q Name or Honey Sriracha Rub.
Grill 2mins each side ending on the skin side above a small but hot bed of embers.
Rest under foil for 5 mins.
Serve with toppings of your choice, some good options are-:
Shallots (fried or fresh)
Sambal
Chilli
Roasted Garlic
6min eggs (ramen style)
Miso
Fried ginger sticks
Bok Choy
Baby Spinach
* the organic ramen noodles from supermarkets work I used edamame noodles this time
