Ingredients:
- 12 chicken thigh fillets
- Vegetable oil
- 4 large eggs
- 500ml buttermilk
- 2 tbs of Lane's BBQ 'One Legged Chicken' Sauce
- 4 cups of plain flour
- 4 tsp salt
- 3 tbs cayenne pepper
- 2 tbs brown sugar
- 1 tbs chilli powder
- 1 tsp paprika
- 1 tsp garlic powder
- Bao buns
- Iceberg lettuce
- Pickles
- Mayonnaise
Method:
- Season the chicken thigh fillets with salt and pepper.
- Whisk 4 large eggs with 500ml buttermilk and 2 tbs of Lane's BBQ 'One Legged Chicken' sauce.
- Mix 4 cups of plain flour with 4 tsp salt.
- Heat vegetable oil in a fryer to 325°F/162°C.
- Dredge the chicken in egg mixture, and then in flour. Fry for about 7-8mins per piece, until browned and 165°F/74°C in the thickest part.
- Whisk 1 cup of hot frying oil with 3 tbs cayenne pepper, 2 tbs brown sugar, 1 tbs chilli powder, 1 tsp paprika, and 1 tsp garlic powder.
- Brush chicken with oil mixture.
- Serve on buns with shredded iceburg lettuce, pickles and mayo.
