Kinda Spicy Pork Belly Rolls

Ingredients
Lane’s Prime Seasoning, as needed
Lane’s Kinda Spicy Sauce, as needed
800g pork belly strips
4 soft bread rolls or burger buns
2 cups rocket
1 cup grated cheese
Directions
Pat the pork belly strips dry with paper towel, then season generously all over with Lane’s Prime Seasoning.
Prepare the BBQ for two-zone cooking, with hot charcoal on one side for direct heat and a cooler side for indirect cooking.
Place the pork belly strips directly over the hot charcoal and sear for approximately 2–3 minutes per side, turning as needed, until they have developed a deep golden colour and slightly crisp edges.
Move the pork belly strips to the indirect side of the BBQ. Close the lid and cook for a further 5–10 minutes, or until the thickest part reaches an internal temperature of approximately 80–85°C.
Remove the pork belly from the BBQ and allow it to rest for 5 minutes before slicing it into bite-sized cubes.
Lightly toast the buns on the BBQ, then add a layer of rocket and grated cheese. Top with the pork belly cubes and generously cover with Lane’s Kinda Spicy Sauce before serving.
