Kinda Smokey Loaded Fries

Ingredients
½–¾ cup Kinda Smokey sauce
1 kg frozen thick-cut fries (or hand-cut potatoes)
3 cups cooked brisket, sliced or chopped
1 ½ cups shredded mozzarella or tasty cheese
1 cup left over mac and cheese
½ cup shredded cheddar
½ red onion, finely diced
1 fresh jalapeño, sliced
2 spring onions, sliced
Sour cream, to serve
Crispy bacon bits
Pickled jalapeños
Fresh parsley or coriander
Directions
Preheat oven or air fryer according to packet instructions. Cook fries until golden and crispy. For extra crunch, cook slightly longer than recommended.
In a saucepan over low heat, gently warm the cooked brisket. Stir through Kinda Smokey sauce until coated and heated through. Add more sauce if you like it extra saucy.
Spread hot fries onto a large serving tray or oven-safe dish. Scatter brisket evenly over the fries.
Sprinkle mozzarella and cheddar generously over the top. Place under a hot grill for 3–5 minutes until melted and bubbling.
Top with red onion, jalapeño and spring onion. Add a drizzle of extra Kinda Smokey sauce and a spoonful of sour cream.
Serve immediately while hot and cheesy.
