A taste of paradise: Grilled Kapalua Lobster with Rum Sauce!

Lane’s Kapalua Seasoning
1 Shot Beenleigh Rum Distillery Double Cask Rum
4 tbsp Salted Butter
1 Lemon

Directions

To begin, prepare the sauce by melting butter in a cast iron skillet until it turns a golden-brown colour. Once golden, incorporate 1 tablespoon of Kapalua rub and stir well. Next, pour in a shot of rum and continue cooking until all the alcohol has evaporated. Meanwhile, place the halved lemon on the grill to be charred.
Now, divide the lobster into halves and generously sprinkle them with Kapalua seasoning. Position the lobster halves on the hot grill with the flesh facing the flames. Grill for approximately 2 minutes before flipping the lobster and initiating the basting process with the butter. Continue grilling and basting for an additional 2 to 3 minutes until the lobster is fully cooked. Remember to squeeze the grilled lemon over the lobster for added flavour enhancement.
