Fiesta Chile Con Queso

  • 1 Tablespoon Olive Oil
  • 500g Beef mince
  • 2 Tbsp Lane's Fiesta Rub
  • ½ Cup Salsa (Try our smoked salsa recipe)
  • 1 Tbsp Lane's One Legged Chicken
  • 1 Cup Milk
  • 150g Cubed Cream Cheese
  • 150g Cubed Sharp Cheddar
  • 150g Cubed Mozzarella Cheese
  • 1 Tbsp Cup Corn Starch
  • Chopped Coriander 


    1. Warm a pan over medium heat and add olive oil
    2. Brown the beef mince and add the Lane's Fiesta
    3. Mix cornstarch into the pan, then pour in the milk, stirring well to combine.
    4. Bring to a simmer, then add the cheese a bit at a time, mixing well. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Take off heat immediately.
    5. Stir in coriander, salsa, and hot sauce
    6. Salt to taste if needed. Mix well.
    7. Garnish with more hot sauce and coriander.
    8. Serve immediately with plenty of tortilla chips
