Chicken Maryland’s w/ Hot Honey Marmalade

Directions

1. Prepare the brine by combining 1.5 litres of water with ½ cup of Sweet Tea Brine. Mix well, add the chicken, cover, and refrigerate for a minimum of 6 hours, up to 24 hours.
2. After brining, remove the chicken, rinse it under running water to eliminate excess brine, and pat it dry.
3. Set your smoker to 150°C/300°F.
4. Season the chicken with Signature seasoning and allow it to rest for 5-10 minutes.
5. Create the marinade by mixing 2 tablespoons of warm water, 2 generous tablespoons of sweet orange marmalade, and a generous squeeze of your favourite Hot Honey.
6. Gently brush or mop the marinade onto the chicken, being careful not to brush off all the seasoning. Coat the chicken as desired.
7. Transfer the chicken to the smoker and cook until the internal temperature reaches 74°C/165°F. For additional char, increase the temperature to 200°C/392°F for the last 10 minutes once the chicken reaches 70-72°C/158-161°F.
8. After cooking, let the chicken rest for 10 minutes before serving.
