Lane’s Australia Sweet Tea Brine
- Sweet Orange Marmalade
- Hot Honey
Directions
- Prepare the brine by combining 1.5 litres of water with ½ cup of Sweet Tea Brine. Mix well, add the chicken, cover, and refrigerate for a minimum of 6 hours, up to 24 hours.
- After brining, remove the chicken, rinse it under running water to eliminate excess brine, and pat it dry.
- Set your smoker to 150°C/300°F.
- Season the chicken with Signature seasoning and allow it to rest for 5-10 minutes.
- Create the marinade by mixing 2 tablespoons of warm water, 2 generous tablespoons of sweet orange marmalade, and a generous squeeze of your favourite Hot Honey.
- Gently brush or mop the marinade onto the chicken, being careful not to brush off all the seasoning. Coat the chicken as desired.
- Transfer the chicken to the smoker and cook until the internal temperature reaches 74°C/165°F. For additional char, increase the temperature to 200°C/392°F for the last 10 minutes once the chicken reaches 70-72°C/158-161°F.
- After cooking, let the chicken rest for 10 minutes before serving.
