Lazy Sunday mornings are Luke's aka @_iluke favourites. Chilling and grilling is his motto (ok we just made that up). This recipe comes with a P.S. though...
Ps. Sorry I’m not the best with measurements, I usually just go by look and taste lol. - Luke (circa 2020)
Ingredients and Method:
Blend a small jar of semi dried tomatoes into a paste.
Add about 2 Tbspn of the jar oil,
Add 1 heaped Tablespoon of Lanes Signature rub,
Blend further until smooth & mixed in.
Mash 5 bocconcini balls and mix into 3 heaped Tablespoons of ricotta.
Grill thick cut sourdough slices.
In a pan add 2 finely chopped garlic gloves, a light handful of finely chopped oregano & a couple of handfuls of petite tomatoes.
Add drizzle of olive oil.
Blister tomato’s until medium soft.
Spread sundried Tomatoes, spread cheese mix, add basil leaves, add blistered tomato’s & top with pepper and drizzle with chilli oil.
