Ingredients

900g Lamb Rack
-
Lanes Black Magic
-
1 Bunch Dutch Carrots
-
2 tbs Honey
-
500g Potato
-
Butter
-
Milk
Directions
Take Lamb out of package and trim up and unwanted bits of fat.
Season Lamb in Black Magic and set aside
In a pot, boil some salted water and place diced potatoes in pot until completely soft.
Stir in desired amount of butter and a splash of milk until creamy.
Place seasoned lamb in the air fryer at 200c for 10-15 minutes or until internal temp hits 140f / 60c
While lamb is cooking, place peeled carrots on a baking dish and bake for 15 minutes. With 5 minutes to go, season with salt and glaze with honey and place back in the oven.
Allow lamb to rest for 5 minutes.
Serve on a plate with a bed of mash potato’s, sliced lamb cutlets and honey glazed carrots.
