Sweet Lemon Pepper Popcorn Shrimp
700g fresh prawns (uncooked)
1/2 Cup Corn Flour
2 Tbsp Baking Powder
2 Tbsp Lane's Sweet Lemon Pepper
1L Vegitable oil
Remove the prawn heads, shells and de-vein
Add oil to a medium sized pot and set over a medium-high heat. Bring oil to the perfect frying range of 180-190c
Add the dry ingredients to a large bowl and combine
Beat an egg In a small bowl and set aside
Cut prawns in half
dip in the egg then, coat well in the flour mixture.
Add some the prawns to the oil. You don't want the pot to be crowded or they'll stick together. After about 30sec the prawns should be a nice golden brown colour and feel crispy. if they're still soft check your oil temp.
Remove the prawns from the oil and leave to cool on a wire rack with paper towel underneath to catch oil. Check oil temp between batches.
No need to add any extra seasoning, serve as an entree or in soft taco tortillas with slaw and a squeeze of lemon.
