- 2 Capsicum Cheeks
- 2tbsp Sour Cream
- 1tbsp Greek Yoghurt
- ½ tbsp Minced Garlic

Lane’s Australia One Legged Chicken Buffalo Sauce
- ½ Lime
- Gouda Cheese
- Spinach & Rocket Mix

Directions
- Preheat the grill to medium-high heat for searing.
- Season the skirt steak to your liking.
- Grill the capsicum until charred, then slice it into strips when charred to your liking.
- Cook the steak to your preferred temperature (medium is achieved at 60°C). Allow it to rest while preparing the sauce.
- In a blender, combine sour cream, yogurt, garlic, buffalo sauce, lime, and coriander. Adjust the sauce consistency with more sour cream if desired. Taste and make adjustments as needed.
- Stir in the chopped coriander (or parsley) into the sauce.
- Toast two slices of sourdough bread and assemble your sandwich. Layer with sauce, spinach and rocket mix, charred capsicum, grilled steak, more sauce, and finally, cheese. Melt the cheese using a blowtorch or under the grill.
- Slice the sandwich and serve. Dip and enjoy!
