Ingredients

8 Chicken Drumsticks
-
200g Cooked Potato – Mashed

150g Mozzarella – Grated

50ml Olive oil
-
75g Lane’s BBQ SPF53
-
1 Bunch of Spring onions – Sliced

250g Panko Breadcrumbs
-
3 Eggs
-
150ml Milk
-
100g Plain flour
-
2lt Veg oil – For frying
-
100ml Sorta white
-
100ml One legged Chicken
Directions
Rub the oil all over the chicken drumsticks & cover with 50g of the SPF53
Roast the Legs for 35 minutes until cooked through then allow to cool slightly
Chop the meat & add it to a bowl, with the potato, cheese, spring onion & the rest of the Lane’s BBQ SPF53
mix everything together & form into log shapes, around the Chicken stick to make it look like a Drumstick
Using the flour, egg wash & Breadcrumbs, crumb the finished croquettes & then fry in the oil @180°c
Drain on paper towel & allow to cool slightly
For the sauce, mix together the Sorta white & One legged chicken, stir well & pour into a serving jug.
Dip into the sauce and hook straight in!
