
SPG CAJUN BUTTER SCALLOPS

Ingredients
Cajun Butter
- 200g butter
- 2 tsp garlic powder
- 2 tsp Italian seasoning
- 2 tsp smoked paprika
- 1 tsp ground cayenne pepper
- 2 tsp onion powder
- 1 tsp coarse ground black pepper
- ½ tsp salt
- ½ tsp crushed red pepper flakes
- 25g honey
Scallops
- 500g sea scallops, side muscle removed

Directions
Make the Cajun Butter:
Add all cajun butter ingredients to a saucepan. Melt gently over low heat, stirring until fully combined. Remove from heat and keep warm.
Prep the Scallops:
Pat scallops completely dry with paper towel (this is key for a good sear). Season lightly on both sides with Lane’s SPG.
Sear: Heat a pan or BBQ hot plate over high heat with a small amount of oil or butter. Sear scallops for 2 minutes on the first side until a golden crust forms. Flip and cook for 1 minute on the other side.
Finish: Remove scallops from heat and transfer to a plate or cooler pan. Spoon the warm cajun butter generously over the scallops, letting it melt and coat them completely.
Serve & Enjoy:
Serve immediately with extra butter drizzled over the top. Perfect on their own, or with crusty bread to mop up the sauce.
