Pork Tenderloin Sandwich

Ingredients

  • White Magic from the Competition Range

  •  4 thick cut eye fillets Steaks (from pork tenderloin)

  • 2 sleeves Salada Crackers 

  • 1 cup All Purpose Flavour

  • 1/4 cup cold water 

  • ½ cup Panko Break Crumbs 

  • Vegetable Oil 

  • ¼ cup Whole Egg Mayonnaise 

  • 1 Egg (large) 

  • Shredded Lettuce 

Directions

  1. Prepare the pork by cutting large tenderloin into 4 even steaks.

  2. Place cling film plastic wrap over each steak and beat them with a mallet/rolling pin until they are super thin.

  3. Season each steak with White Magic on both sides and allow to sweat into steaks.

  4. In a bowl, add flour and set aside.

  5. In a food processor, blend Salada crackers with panko crumbs and place in another bowl

  6. In another bowl, crack egg, add mayonnaise and cold water and whisk until combined (Add a touch of flour if you are wanting to thicken the batter a little bit)

  7. Place steaks into flour and then into wet mixture, then into Salada cracker mix and shallow fry in oil for 2-3 minute per side or until deep golden brown.

  8. Place pork on a wire rack to rest for a couple of minutes

  9. Place pork steak on bun and add your favourite condiments, we used Mayo, Pickled Jalapeños and Shredded Lettuce.
