Pork Tenderloin Sandwich

Ingredients

White Magic from the Competition Range

4 thick cut eye fillets Steaks (from pork tenderloin)

2 sleeves Salada Crackers

1 cup All Purpose Flavour

1/4 cup cold water
-
½ cup Panko Break Crumbs
-
Vegetable Oil
-
¼ cup Whole Egg Mayonnaise

1 Egg (large)

Shredded Lettuce
Directions
Prepare the pork by cutting large tenderloin into 4 even steaks.
Place cling film plastic wrap over each steak and beat them with a mallet/rolling pin until they are super thin.
Season each steak with White Magic on both sides and allow to sweat into steaks.
In a bowl, add flour and set aside.
In a food processor, blend Salada crackers with panko crumbs and place in another bowl
In another bowl, crack egg, add mayonnaise and cold water and whisk until combined (Add a touch of flour if you are wanting to thicken the batter a little bit)
Place steaks into flour and then into wet mixture, then into Salada cracker mix and shallow fry in oil for 2-3 minute per side or until deep golden brown.
Place pork on a wire rack to rest for a couple of minutes
Place pork steak on bun and add your favourite condiments, we used Mayo, Pickled Jalapeños and Shredded Lettuce.
