Place pork rind in air fryer /oven covered in salt at 200c for 45 minutes or
until bubbly.
Season pork belly and roll into a log.
Place skewers through belly and cut into lollipops, seasoning the outside of
the pork.
Place in a preheated smoker or oven at 300f/148c for 2 hours or until rub is
sticking to the meat.
Place in a tray with butter, pineapple chipotle and brown sugar, covered and
back into the smoker for a further 1-2 hours or until pork belly probes like
soft butter (usually this is around 208f/98c
Take your pork crackle and crush into a dust and sprinkle on top of pork
lollipop.
