Ingredients
- 400–500g chuck steak or ribeye
- Lane’s Magic Dust
- 1–2 tbsp beef tallow
- Fresh parsley, finely chopped (to finish)
Directions
- Slice the chuck or ribeye into bite-sized cubes, keeping the pieces as even as possible for consistent cooking.
- Season generously on all sides with Lane’s Magic Dust.
- Heat a heavy-based pan over high heat until screaming hot. Add the beef tallow and let it melt and shimmer.
- Add the steak bites in a single layer. Don’t overcrowd the pan.
- Sear for 2 minutes on the first side until deeply caramelised. Flip and cook for another 2 minutes on the other side.
