Directions

1. Slice the chuck or ribeye into bite-sized cubes, keeping the pieces as even as possible for consistent cooking.
2. Season generously on all sides with Lane’s Magic Dust.
3. Heat a heavy-based pan over high heat until screaming hot. Add the beef tallow and let it melt and shimmer.
4. Add the steak bites in a single layer. Don’t overcrowd the pan.
5. Sear for 2 minutes on the first side until deeply caramelised. Flip and cook for another 2 minutes on the other side.
