Magic Dust
1 x large whole chicken
Sourdough - cut into cubes
100g Chicken stock
4 x Garlic cloves - crushed
1 x brown onion - chopped
3 x thyme sprigs
50g cranberries
1 x egg
100g butter - softened
Preheat a fan forced oven to 180c
Pro tip–leave the chicken on the bench for 30 minutes before you cook it, this willhelp the chicken cook more evenly and stay juicy.
Into a fry pan, add a tablespoonof butter, the onions and garlic, cook for 3 minutes onmedium heat, stirring constantly
Add the thyme, cranberries, sourdough and stock
Season with salt, pepper and magic dust & stir to combine
Remove from the heat & transfer to a bowl, let sit for 15 minutes so the bread absorbsthe liquid
Add the egg and mix well
Stuff the chicken with this mixture
Mix the magic dust with the butter & rub all over the chicken, stuff with the stuffing and cook in the oven for 1.5 hrs
Serve and enjoy.
