Cowboy Butter Pork Tenderloin

Ingredients

  • Cowboy Butter seasoning

  • 1–2 pork tenderloins
  • Yellow mustard (binder)
  • Fresh rosemary & oregano, finely chopped
  • Oil or beef tallow (for searing)

Directions

  1. (Optional) Cut the pork tenderloin in half lengthways to make searing easier and more even.
  2. Season the pork generously all over with Cowboy Butter seasoning.

  3. Heat a pan over high heat with a small amount of oil or beef tallow.
  4. Sear the pork on all sides until nicely browned, about 60–120 seconds total.
  5. Remove from the pan and lightly coat the outside with yellow mustard.
  6. Re-season with a mixture of chopped rosemary and oregano.
  7. Preheat your smoker to 150°C.
  8. Place the pork into the smoker and cook until the internal temperature reaches 63°C.
  9. Remove from the smoker and rest for 5 minutes before slicing.
  10. Slice and serve hot.
