
Cowboy Butter Pork Tenderloin

Ingredients
- 1–2 pork tenderloins

Cowboy Butter seasoning
- Yellow mustard (binder)
- Fresh rosemary & oregano, finely chopped
- Oil or beef tallow (for searing)
Directions
- (Optional) Cut the pork tenderloin in half lengthways to make searing easier and more even.
Season the pork generously all over with Cowboy Butter seasoning.
- Heat a pan over high heat with a small amount of oil or beef tallow.
- Sear the pork on all sides until nicely browned, about 60–120 seconds total.
- Remove from the pan and lightly coat the outside with yellow mustard.
- Re-season with a mixture of chopped rosemary and oregano.
- Preheat your smoker to 150°C.
- Place the pork into the smoker and cook until the internal temperature reaches 63°C.
- Remove from the smoker and rest for 5 minutes before slicing.
- Slice and serve hot.
