Chilli Lime Pork Belly Bites

Ingredients
Chilli Lime
1.5kg pork belly strips
Olive oil or yellow mustard as binder
Guacamole
2 ripe avocados
Juice of 1 lime
1 small tomato, diced
¼ red onion, finely diced
Salt to taste
Optional: fresh coriander and chilli flakes
Directions
Pat the pork belly strips dry with paper towel. Lightly coat with olive oil or mustard, then season heavily on all sides with Lane’s Chilli Lime seasoning.
Leave uncovered in the fridge for 30 minutes if you want even better bark and crispiness.
Set your smoker to 250°F (120°C).
Place the pork belly strips directly onto the smoker grates and smoke for around 2.5–3 hours, or until the pork is beautifully rendered and tender.
You’re looking for deep colour and the fat to start softening nicely.
Transfer the pork belly strips into the air fryer.
Cook at 200°C for 8–12 minutes, flipping halfway through, until the edges are crispy and caramelised.
Mash the avocados in a bowl, then mix through lime juice, tomato, onion, salt, and any extras you like. Keep it chunky.
Pile the crispy pork belly onto a platter with the guacamole in the middle for dipping.
Finish with an extra sprinkle of Chilli Lime seasoning and fresh lime wedges.
