Cheesy Beef Barbacoa

Cheesy Chuck Beef Barbacoa

Ingredients

  • 2 tbsp Lane’s BBQ Prime seasoning
  • 1 whole chuck roast, cut into chunks
  • 1 tbsp beef tallow (or oil)
  • 1 Roma tomato
  • 3–4 garlic cloves
  • 1 cup beef bone broth
  • ½ cup vinegar
  • ½ lemon (juice)
  • ½ onion
  • Salt & pepper, to taste
  • Fresh coriander, chopped
  • Cheese blend (Gouda, Havarti & Mozzarella recommended)
  • Bread, for serving

Directions

  1. Prep & Sear the Beef - Slice the chuck roast into large chunks. Heat beef tallow in a pan and sear each piece until browned on all sides. (You can season here if you like.)

  2. Blend the Braising Liquid - In a blender, combine tomato, garlic, bone broth, vinegar, lemon juice, onion, and Lane’s BBQ Prime seasoning. Blend until smooth.

  3. Slow Cook to Tender Perfection - Pour the blended braising liquid into a pot with the seared beef. Season with salt and pepper. Cover and cook on low heat for 3–5 hours, or until the meat is fork-tender and easily shreddable.

  4. Shred & Add cheese - Shred the beef using two forks. Stir through some fresh coriander, then top generously with your cheese blend.

  5. Melt the cheese - Return the pot to low heat on the stove, or Pop it in the oven at 150°C for 5 minutes, or Go all-in with the fun option — melt it with a flame thrower!

  6. Serve it up - Toast some fresh bread, pile on that cheesy beef goodness, and dig in
