Lane’s Island Dust
Lane’s Kinda Sweet
500g Pork Belly Strips
Preheat your smoker to 135°C.
Remove the skin from the pork belly (if not already removed)
Season generously with Island Dust
Smoke for 45min-1hr or until colour has developed and seasoning is set to the meat
Remove from the smoker, place in a foil tray and smother in Kinda Sweet
Wrap with foil and put back in the smoker for 1-2hrs or until the meat is tender and fall apart
Remove the foil, flip the meat to coat in all of the sauce
Rest for 5mins, dig in!
