Apple Skillet Cake

  • 2 medium apples, peeled and sliced
  • ¼ teaspoon ground cinnamon
  • Pinch ground cardamom
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon juice
  • Generous sprinkle of Lanes caramel seasoning

Combine all ingredients in a mixing bowl and set aside



  • 1 ¼ cups plan flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon bicarb soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ¾ Cup almond meal
  • 1 cup reduced fat ricotta
  • 1 tablespoon milk
  • 2 teaspoons lemon juice
  • ½ cup unsalted butter (melted)
  • ½ cup honey
  • 2 eggs (room temperature)
  • Lanes caramel seasoning


Sift together flour, baking powder, bicarb soda, salt, cardamom and cinnamon. Set aside

In a small bowl, stir together ricotta, milk and lemon juice. Set aside

Coat a cast iron pan in melted butter, then pour remaining butter into a bowl and whisk in honey, eggs and ricotta mixture

Pour the liquid ingredients into the dry ingredients and stir until just combined. Pour the batter into the buttered cast iron pan

Arrange the apple slices on top of the batter and sprinkle generously with Lanes Caramel Seasoning


Place the cast iron pan into your bbq (we used our Wildfire offset with Aussie Oak) and smoke for approx.. 40 minutes at 350F or until a skewer inserted into the middle comes out clean

Enjoy warm with whipped cream or ice cream
