Lane’s Island Dust
- 1.6kg Pork Belly
- Lane’s Pineapple Chipotle
- Brown Sugar
- Butter
Directions
- Remove rind from pork belly and dry thoroughly.
- Place pork rind in air fryer /oven covered in salt at 200c for 45 minutes or until bubbly.
- Season pork belly and roll into a log.
- Place skewers through belly and cut into lollipops, seasoning the outside of the pork.
- Place in a preheated smoker or oven at 300f/148c for 2 hours or until rub is sticking to the meat.
- Place in a tray with butter, pineapple chipotle and brown sugar, covered and back into the smoker for a further 1-2 hours or until pork belly probes like soft butter (usually this is around 208f/98c
- Take your pork crackle and crush into a dust and sprinkle on top of pork lollipop.
